Gluten-Free Banana Bread

Happy Friday, everyone!

Last night I decided to make banana bread.


I found this recipe awhile ago, and it is simply the best gluten-free banana bread I’ve had.

I made substitutions, as usual. Vanilla extract instead of stevia, and sucanat in place of honey.

I love using sucanat in baked goods. I think it’s because my mom would use it in breads when I was growing up. She made the best homemade bread, she’d grind her own wheat for it and everything!

Of course, those breads are off the table for me now, but this banana bread comes pretty close to some that I had growing up.

Happy Friday, everyone!

Yesterday was filled with so much cooking and baking in preparation for Christmas. Can you believe it’s less than a week away?

I’ve really been slacking off this year in the baking area this year. I’ve attempted to make amends, though I’m not sure this is good enough.

Thus far I’ve made snowballs, thumbprints, gingerbread, the dough for some lovely jam filled cookies, and a gingerbread house which I’m so excited to put together and decorate!

Then there was of course the white chocolate mint fudge, eggnog white hot chocolate, and… oh, who am I kidding? I don’t believe there was anything besides those. Oh, yes there was. I also made some eggnog fudge.

Eggnog White Hot Chocolate And White Chocolate Mint Fudge

Happy Friday, everyone!

I have had a simply lovely week this week filled with all sorts of Christmasy things.

Today it is all about the white chocolate! This year I had wanted to try my hand at some candy making, instead of just focusing on the usual cookies and baking. I’m not sure how much I’ll be doing, but thus far I’ve made some yummy white chocolate mint fudge.


I used the Nestle fudge recipe and tweaked it a bit with white chocolate and a nice hint of mint. Then I added a few drops of food coloring onto the fudge after pouring it in the pan, and swirled it around for a more festive look.

Since I already had plenty of white chocolate chips on hand, I figured that white hot chocolate sounded incredible. I’ve been wanting to try a warm eggnog drink for awhile, so hey, why not combine them? And that’s exactly what I did. It’s a perfect combination of silky smooth sweetness that is just perfect for the holidays and a cold winter’s evening.

Christmas And Fiesta Friday

Happy Friday, Everyone!

In light of the Christmas season, I’ve decided to post a little extra this month. It should be filled with baked goods and candies, maybe some decorating or projects as well!

I’ve decided to participate in Fiesta Friday this week. Jhuls from The Not So Creative Cook invited me to join in on the fun last month, and I’ve been waiting for a good time to begin! This seems like as good a time as any whereas I’ve been so busy throughout the month of November that I haven’t had the chance yet!

So, in preparation for Fiesta Friday, I made these cinnamon apple cookies last night! Then proceeded to enjoy them with a warm mug of hot chocolate, which made for the perfect cozy evening.


The recipe still needs a bit of tweaking, but I’ll be sure to post it after I’ve experimented a bit more!

How I Failed Friday

Welcome to the pessimistic portion of this blog! How I failed Friday. Now, this wasn’t something I was planning on, but it happened to work out that way.

I was thinking on Friday that a cake sounded really good. So I decided to make a brownie, pudding, ganache, cake-like thing… With raspberry sauce and whipped cream on top.

It went… not exactly as planned. First, I burned the brownies. Then I ended up having to cut all the edges off because of it. Still tasted good, it was just incredibly hard.

The pudding was too thick… Not even sure what happened there, I may have cooked it too long…

The ganache was amazing, as were the raspberries and whipped cream.

The thing is, it wasn’t pretty. But just because something isn’t pretty doesn’t mean we failed. As long as we always learn from our mistakes, there really isn’t such a thing as failure. Maybe a failed attempt at perfection… But is perfection something that any of us can really ever have anyway?

I learned that next time, I need to cook the brownies for a shorter time (maybe the pudding too). And I’ll also make two layers of brownies instead of trying to cut a single one in half. It also reaffirmed my idea that baking isn’t really for me… But I’ll try it anyway!

Then there’s also this: I’ve been reading Start by Jon Acuff. Just the other day I got to the part where he says, “This too shall post.” I had decided to post about this failed attempt at a perfect dessert before I read it, but it’s still a powerful reminder to be open and share our weaknesses and failings as well as our success.

If we learn how not to do something, why not use that to share with others, or to better ourselves for the next time an opportunity arises?

It’s also important to be willing to get up, dust ourselves off and try again when we’ve approached what seems like a failure. I’m going to try this brownie cake again. And I’m going to do better next time… And hopefully have a recipe to post. And… If I don’t, I guess I’ll have another post to share with you on the importance of “try try again.”

So there’s my how I failed Friday. I guess it wasn’t so negative after all. Mistakes are an opportunity to grow, not an excuse for self-deprecating thoughts, comments or actions.
