Gluten-Free Almond Joy Cupcakes

Happy Friday, everyone!

And happy anniversary to Fiesta Friday!

Today I have something a little special for you. Gluten-Free Almond Joy Cupcakes.

These have the perfect balance between a sweet, sugary top and a milder cake.

For the base I used this cupcake recipe, and just substituted 1 1/2 tsp almond extract for the vanilla.

Start by lining your muffin tins.

Cream the butter and sugar.

After adding the eggs…

And the rest of the ingredients.

Take a large spoon and scoop batter into lined muffin tins.

Then bake.

Then, as the cupcakes cool, mix together 2 cups shredded coconut, 6 Tbls (1/4 C+ 1/8 C) sweetened condensed milk, and 1/2 tsp vanilla extract in a medium sized bowl.

Scoop spoonfuls of the coconut mix onto cooled cupcakes and press gently with the palm of your (clean) hand to get the coconut to stick and spread out.

Do this until all the cupcakes are topped with coconut.

Almost There

Make chocolate ganache by heating 3/4 cup whipping cream on medium heat until almost boiled. Mix in a 12 oz bag of dark chocolate chips. (Sorry for not having pictures of the ganache.) Remove from heat, and stir until chocolate is melted.

Dollop ganache over coconut, and spread just enough that it starts to drip over edges.

Iced

Top with sliced or slivered almonds, and enjoy!

Gluten-Free Banana Bread

Happy Friday, everyone!

Last night I decided to make banana bread.

I found this recipe awhile ago, and it is simply the best gluten-free banana bread I’ve had.

I made substitutions, as usual. Vanilla extract instead of stevia, and sucanat in place of honey.

I love using sucanat in baked goods. I think it’s because my mom would use it in breads when I was growing up. She made the best homemade bread, she’d grind her own wheat for it and everything!

Of course, those breads are off the table for me now, but this banana bread comes pretty close to some that I had growing up.

Eggnog White Hot Chocolate And White Chocolate Mint Fudge

Happy Friday, everyone!

I have had a simply lovely week this week filled with all sorts of Christmasy things.

Today it is all about the white chocolate! This year I had wanted to try my hand at some candy making, instead of just focusing on the usual cookies and baking. I’m not sure how much I’ll be doing, but thus far I’ve made some yummy white chocolate mint fudge.

I used the Nestle fudge recipe and tweaked it a bit with white chocolate and a nice hint of mint. Then I added a few drops of food coloring onto the fudge after pouring it in the pan, and swirled it around for a more festive look.

Since I already had plenty of white chocolate chips on hand, I figured that white hot chocolate sounded incredible. I’ve been wanting to try a warm eggnog drink for awhile, so hey, why not combine them? And that’s exactly what I did. It’s a perfect combination of silky smooth sweetness that is just perfect for the holidays and a cold winter’s evening.

Christmas And Fiesta Friday

Happy Friday, Everyone!

In light of the Christmas season, I’ve decided to post a little extra this month. It should be filled with baked goods and candies, maybe some decorating or projects as well!

I’ve decided to participate in Fiesta Friday this week. Jhuls from The Not So Creative Cook invited me to join in on the fun last month, and I’ve been waiting for a good time to begin! This seems like as good a time as any whereas I’ve been so busy throughout the month of November that I haven’t had the chance yet!

So, in preparation for Fiesta Friday, I made these cinnamon apple cookies last night! Then proceeded to enjoy them with a warm mug of hot chocolate, which made for the perfect cozy evening.

The recipe still needs a bit of tweaking, but I’ll be sure to post it after I’ve experimented a bit more!
